Shish marinade with mayonnaise
Which meat should I choose for shashlik?
Choosing the right meat is essential to making delicious shashlik, and choosing a marinade for your shashlik is even more difficult – this time, we’re offering a shashlik marinade with mayonnaise. The most common choices for shish kebabs are pork, lamb, beef or chicken, depending on personal taste and tradition. Once the meat has been selected, you can think about the right marinade for it.
Pork is the most popular choice because of its juiciness and tenderness, especially the loin or ribs. Our favourite pork neck. A marinade of shish kebabs with mayonnaise and onions is very suitable for pork.
Mutton has a more intense flavour and is ideal for those who like a strong meat flavour, while beef, although tougher, can be very tasty when cooked properly. Chicken, especially thighs, is a lighter alternative that absorbs the flavours of the marinade quickly.
If you prefer leaner meat, we recommend that you try putting thin strips of pork fat in the gaps when cooking the shashlik on skewers. The fat will give a more special taste.

Freshness of meat
The freshness and quality of the meat is very important. It is best to choose fresh meat from reputable suppliers or outlets. In Lithuania, you will find excellent fresh meat in local butcher shops, the products are not soaked and do not sit on the shelves for long, so you are guaranteed a fresh and good tasting product.
Marinating shish kebabs
It is recommended to marinate the meat for shish kebabs for at least a few hours, and preferably overnight. The marinade not only gives the meat the desired flavour but also makes it more tender.
Preparation
The choice of meat is not only important when preparing barbecue, but also its preparation. The meat should be cut into pieces of the same size so that they all cook evenly. The grill or barbecue on which the barbecue is cooked must be properly cooked – the meat must not touch the flame to prevent the outside of the grill from cooking and the inside from getting browned.
Choosing the right meat and following the cooking tips can produce delicious barbecues that will delight family members and guests alike. The most important thing is to experiment with flavours and enjoy the cooking process.
